Chocolate Cake

Cake

Preheat oven to 350°F (175°C). Whisk together the dry ingredients in a bowl:

  • 180g sugar
  • 120g flour
  • 31g cocoa powder
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt

Whisk together the wet ingredients in a separate bowl:

  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract

Then combine the wet and dry ingredients and mix well. Finally, add:

  • 1/2 cup boiling water

Mix until smooth and pour into a greased 9-inch round cake pan with parchment paper underneath. Bake at 350°F (175°C) for 30-35 minutes or until a toothpick comes out clean. Let cool before frosting.

Berry Compote

In a saucepan, combine:

  • 2 cup mixed berries (fresh or frozen)
  • 1/2 cup sugar
  • 1 tbsp lemon juice

Cook over low heat until the sugar dissolves, berries break down, and the mixture thickens, about 10 minutes. Turn off heat and add:

  • 1 tbsp cornstarch mixed with 1 tbsp water

Mix well and let cool.

Ganache

In a saucepan, heat:

  • 1/2 cup heavy cream

Heat until just before boiling. Pour over:

  • 1 cup dark baking chocolate or chips

Let sit for 5 minutes, then stir until smooth. Let cool to room temperature completely before spreading over the cooled cake.
